The Witcher 3's official system requirements list 50 GB of storage, and that is a safe amount to reserve. Actual on-disk size for the next-gen build is a bit smaller in practice, around 35-50 GB depending on platform, patch level and which optional high-resolution assets are present (the GOG next-gen download, for example, has been measured near 47.6 GB). The Complete Edition includes both story expansions, Hearts of Stone and Blood and Wine, within that footprint. The 2022 next-gen update replaced older assets with higher-resolution textures and added ray-tracing data, so the modern build is somewhat larger than the original 2015 release. On PC you can confirm the exact size in Steam or GOG Galaxy under the game's installed-files view. An SSD is strongly recommended for the next-gen version because it streams a dense open world; hard-drive support is being phased out entirely in a future update. Keep a few GB of headroom for save files and patches.
